Shopping list
Meat & Seafood
• 2 cups chicken
Produce
• 1 red onion
• 1 Apple
• 1/2 cup Grapes
• 2 lemons
• Lettuce
• 1 medium cucumber
• 6 grape or cherry tomatoes
• Fresh dill
Seasonings/Spices/Condiments
• Garlic powder
• Salt & pepper
• 1 teas Dijon mustard
• 1 teas honey
Canned goods/ Soups
• 2 - 15 oz cans of chickpeas
Dairy
• Feta or Goat cheese
• 1/2 cup Greek yogurt
Dried goods
• Sandwich bread
• 1/4 dried cranberries
• 1/4 cup slivered almonds
Baking
• 1/4 cup olive oil
*If you plan to make these recipes more than once a week you will need to increase the above amounts.



Easy Chickpea Salad w/ Lemon and Dill
Ingredients
- 1 medium cucumber
- 2 (15 oz) cans of chickpeas
- 6 small tomatoes
- 1 1/2 ounces feta cheese or goat cheese
- 1 lg fresh lemon
- 1/4 cup olive oil
- 1 teas Dijon mustard
- 1/2 teas honey
- 1/4 cup coarsely chopped fresh dill
- Salt & pepper
DIRECTIONS
- Open, drain and rinse the chickpeas, and then add to a large bowl.
- Cut the cucumbers into quarters, lengthwise, and then chop into bite-size chunks.
- Cut the tomatoes into small wedges.
- Add the cucumbers and tomatoes to the chickpeas then break the cheese into crumbles on top.
- In a medium bowl, make the dressing. Whisk juice of lemon, olive oil, mustard, honey, and the fresh dill together then season with salt and pepper, to taste. Pour the dressing over the salad and toss.
Greek Yogurt Chicken Salad Sandwich
INGREDIENTS
- 2 cups cooked chicken (my favorite is in the crockpot)
- 1/2 cup diced red onion
- 1/2 cup diced apple
- 1/2 cup grapes, halved
- 1/4 cup dried cranberries
- 1/4 cup slivered almonds
- 1/2 cup plain greek yogurt
- 1 tbsp fresh lemon juice
- 1/2 teas garlic powder
- salt & pepper
- 8 slices of bread
- lettuce
DIRECTIONS
In a large bowl, combine chicken, red onion, apple, grapes, dried cranberries, sliced almonds, Greek yogurt, lemon juice, garlic powder, salt and pepper, to taste.
Serve on bread with lettuce.
